Italian Sausage, Potato & Parmesan Cheese Tart

Looking for a simple and delicious tart that can be enjoyed as a snack or quick meal?  Our flavourful upside-down spelt butter puff pastry tart made with Italian sausage, potato, and Parmesan cheese is perfect for satisfying your cravings any time of the day. Serve it as an appetizer or enjoy it with a crisp salad on the side for a satisfying and quick meal.

Ingredients

  • 375g pack Carême All Butter Puff Pastry, defrosted
  • 2 tablespoons olive oil
  • 1 teaspoon dried chili flakes
  • 1 tablespoon fresh oregano leaves (can used dried)
  • 2 pork & fennel sausages, meat removed from casing
  • 1 large potato thinly sliced on a mandolin
  • 1/2 cup grated Parmesan cheese

Method

  1. Preheat oven to 200°C (220°C conventional).
  2. Line a large baking sheet with baking paper. Cut the pastry into 8 equal sized rectangles and set aside.
  3. These tarts are prepared upside down, begin by drizzling 1 teaspoon of olive oil directly on to the baking paper, sprinkle with a pinch of dried chili flakes and oregano leaves, followed by little balls of the sausage meat (approximately 1/4 sausage per tart), then top with 6 thin slices of potato and finish with a sprinkle of grated parmesan, repeat a further 7 times, ensuring you leave enough space between each tart on the baking tray.
  4. Finish by placing the pre-cut rectangles of pastry on top of the ingredients, using your thumb, gently crimp the pastry around the edge of each tart.
  5. Bake for 14 to 16 minutes until pastry golden brown.
  6. Leave to cool for 10 minutes before inverting, sprinkle with extra grated parmesan before serving.
