Just pronouncing it can be tricky enough let alone the thought of attempting this classic French dessert at home!

Mille Feuille translated means a ‘thousand layers’, referring to the number of layers of puff pastry in the finished dish.

So what is Mille Feuille?

A purist would argue it consists of three layers of puff pastry and two intervening layers of pastry cream. If you are sharp with numbers you will soon realize there is a little poetic license in that ‘thousand’ layer description!
Really a Mille Feuille is within everyone’s reach when you can use an authentic all butter puff pastry rather than making your own. Add in a couple of other cheats tricks and voila you can whip up an amazing looking and tasting dessert at home.
Adding fruit to a Mille Feuille is not strictly ‘authentic’ but hey we are in cheat’s mode. So make the most of seasonal fruit, try it with raspberries, strawberries, blueberries, mangos, peach, whatever takes your fancy.
In true cheat’s fashion we have done away with the pastry cream in favour of whipped cream and mascarpone.
Lastly the only way to cut this baby is with a serrated knife using a sawing action.
